Cake Tasting


I flew out to Vienna  a couple of weeks ago for back to back meetings with vendors including Demel ahead of a luxury destination wedding. This legendary establishment has been making exquisite chocolate and the finest confectionary by hand at Vienna's most elegant address for over two centuries.

I was taken for an exclusive tour in the cake cellar.  What made this particular vendor even more special was that  Bill Clinton had stopped here for cakes. For that reason alone my client was sold.

When meeting with wedding cake vendors, you need to look through their portfolio, have a tasting, discuss flavours( for nut allergies, etc), guest numbers, aesthetics,  logistics, complimentary accessories including cake stand , knife, and so on. Never assume ask questions.

Traditional Viennese flavours including Sachertorte  a very rich chocolate cake, with layers of apricot jam are part of the Vienna experience.

Sachertorte was invented in 1832 by 16-year-old Franz Sacher and today over 1,000 cakes are sold daily in four of the most prestigious locations across Austria, Demel being one. It was therefore no surprise  that the patisserie chef declined my suggestion of using a foreign recipe, red velvet.

Well the meeting ended with a negotiated price, cake design and a few additional flavours . It was no surprise that I returned home slightly heavier and greedier.
